- 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
- 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)

Instructions
- Preheat your oven to 400°F and lightly coat a baking sheet with olive oil or non-stick spray.
- Grate the zucchini into a clean towel, roll it up tightly, and twist to remove excess moisture.
- Grate the garlic and combine it in a mixing bowl with the drained zucchini, egg, breadcrumbs, cheese, herbs, salt, and pepper. Mix until evenly combined.
- Form tablespoon-sized balls of the mixture and place them on the prepared baking sheet.
