  • 1 tablespoon sea salt
  • 3 green onions, sliced
  • 3/4 cup diced red bell pepper
  • 1 cup diced purple cabbage
  • 1 large English cucumber, diced
  • 1 cup chopped fresh parsley
  • 1/3 cup lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried mint
  • 1 teaspoon sumac
  • 1/4 teaspoon granulated garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 cup extra virgin olive oil

Instructions

  1. Boil water in a large pot and add sea salt. Cook cauliflower florets for about 5 minutes until tender yet crisp. Drain and rinse under cold water.
  2. In a mixing bowl, whisk together lemon juice, oregano, mint, sumac, garlic powder, sea salt, cracked black pepper, and olive oil.
  3. In a large bowl, combine the cooked cauliflower with green onions, red bell pepper, purple cabbage, cucumber, and parsley.
  4. Pour dressing over the salad and toss gently until well coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
