Ingredients

  • 2 cups of steeped tea
  • 4 cups of sugar
  • 4 regular-sized tea bags
  • 1 pouch of liquid pectin
  • 1/4 cup bottled lemon juice

Instructions

  1. Steep four regular-sized tea bags in 2 1/2 cups of boiling water for twelve hours.
  2. Remove tea bags without pinching and strain the tea through cheesecloth or a coffee filter.
  3. Measure two cups of strained tea into a large pot and simmer gently.
  4. Stir in four cups of sugar all at once until dissolved; add lemon juice and boil for one minute.
  5. Add the liquid pectin, boil for an additional minute while stirring constantly.
  6. Skim off any foam and ladle the jelly into sterilized jars, leaving about 1/4" headspace.
  7. Process jars in a boiling water canner for ten minutes; let them sit undisturbed for 24 hours before using.
