Ingredients

Scale
  • 4 medium peaches
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • 1/2 cup buttermilk
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon sparkling sugar (for topping)

Instructions

  1. Preheat your oven to 350°F and generously butter a 9-inch deep-dish pie plate.
  2. Peel and slice the peaches into eight wedges each; place them on a paper towel to remove excess moisture.
  3. In a bowl, whisk together flour, baking powder, and salt; set aside.
  4. In a large bowl, use an electric mixer to cream the butter until smooth. Gradually add sugar and beat until light and fluffy.
  5. Mix in the egg, buttermilk, and vanilla extract until just combined.
  6. Gradually incorporate the dry ingredients into the wet mixture until just combined; do not overmix.
  7. Pour the batter into the prepared pie plate, smoothing the top. Arrange peach slices on top and sprinkle with sparkling sugar.
  8. Bake for 10 minutes at 350°F, then reduce temperature to 325°F and bake for an additional 50-60 minutes or until a toothpick comes out clean.
  9. Let cool before slicing and serve as desired.
