  • 3 cups fresh strawberries
  • 1/2 cup sugar
  • 1 lemon (juiced)
  • 1 lb mascarpone cheese (room temperature)
  • 4 oz cream cheese (room temperature)
  • 1 cup sugar
  • 3.5 oz strawberry pudding mix
  • 1 teaspoon vanilla extract
  • 8 oz whipped topping
  • 1 pint fresh strawberries (sliced)

Instructions

  1. Prepare the strawberries by combining them with 1/2 cup sugar and lemon juice in a mixing bowl. Let sit for 10 minutes until juices are released.
  2. In another bowl, blend mascarpone and cream cheese until smooth using an electric mixer. Gradually mix in the remaining sugar, pudding mix, and vanilla extract.
  3. Dip each Savoiardi cookie briefly into the strawberry mixture and arrange them at the bottom of a baking dish. Spread half of the cream mixture over the cookies.
  4. Repeat with another layer of dipped cookies followed by the remaining cream mixture.
  5. Top with whipped topping and decorate with sliced fresh strawberries.
  6. Cover and refrigerate for at least 4 hours or overnight before serving.
