- 12.35 ounces Brussels sprouts (trimmed weight)
- 1 onion (finely chopped)
- 1–2 garlic cloves (finely chopped)
- ¾ cup frozen petits pois
- 1 tablespoon olive oil
- 2 teaspoons plant-based butter
- 3 cups vegetable stock
- Pepper to taste
Instructions
- Trim and rinse Brussels sprouts, then finely shred them using a blender.
- In a medium pot, heat olive oil over medium heat. Sauté garlic and onion for 3-4 minutes until softened.
- Add shredded Brussels sprouts to the pot and cook for one minute.
- Pour in vegetable stock and add pepper; cover and bring to a boil. Reduce heat and simmer for 5 minutes.
- Stir in frozen petits pois and cook for an additional minute.
- Remove from heat, blend until smooth, stir in plant-based butter, adjust seasoning if necessary, and serve hot.
