  • 1 cup all-purpose flour

  • 1/2 teaspoon salt

  • 1/4 cup chopped fresh dill
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • Vegetable oil, for frying
  • 1 cup mayonnaise

Instructions

  1. Soak salt cod fillets in cold water for at least 12 hours, changing the water several times. Drain and flake into small pieces.
  2. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Stir in chopped parsley and dill.
  3. In another bowl, whisk egg and milk together. Gradually add to dry ingredients, mixing until just combined.
  4. Fold in flaked salt cod gently.
  5. Heat vegetable oil in a skillet over medium-high heat. Drop spoonfuls of batter into hot oil, ensuring not to overcrowd the pan.
  6. Fry for 2-3 minutes on each side until golden brown. Drain on a wire rack.
  7. For aioli: Mix mayonnaise, minced garlic, lemon juice, chopped parsley, and lemon zest in a small bowl.
