Ingredients
- 16 oz bowtie pasta (or your favorite small pasta)
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 orange bell pepper, diced
- 1 yellow bell pepper, diced
- 4 oz cherry tomatoes, halved
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 large garlic cloves, minced
- Juice of 2 lemons
- 2 tablespoons dijon mustard
- 1–2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions until al dente. Drain and cool slightly.
- In a small bowl, whisk together minced garlic, lemon juice, dijon mustard, olive oil, salt, and pepper.
- In a large mixing bowl, combine cooked pasta, diced vegetables, and chickpeas. Pour the dressing over the mixture and toss until evenly coated.
- Chill in the refrigerator for a few hours or serve immediately.
