  • 4 cups chicken stock
  • 1 medium onion, chopped
  • 1 cup heavy whipping cream
  • 4 to 5 ounces fresh spinach
  • 1 cup sun-dried tomatoes
  • 1/2 cup freshly shredded parmesan cheese
  • 1 tablespoon sun-dried tomato oil
  • 1/3 cup tomato paste
  • 1 teaspoon red chili flakes
  • 5 garlic cloves, minced
  • 1/4 cup fresh basil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Instructions

  1. Prepare ingredients: Chop the onion, mince the garlic, and prepare spinach and sun-dried tomatoes.
  2. In a large pot over medium heat, sauté chopped onion until translucent (3–4 minutes) then add minced garlic for another minute.
  3. Add chicken stock and paneer pasta along with tomato paste, red chili flakes, salt, and pepper; bring to a boil.
  4. Once boiling, reduce heat to low and cover; let simmer for about 15 minutes until pasta is al dente.
  5. Stir in heavy whipping cream followed by spinach, sun-dried tomatoes, basil, and parmesan cheese; cook for an additional 2–3 minutes until heated through.
  6. Serve hot garnished with extra basil or parmesan.
