Ingredients
- 8 ounces dried uncooked pasta
- 1 can (15.5 ounces) black beans, rinsed and drained
- 1 cup corn
- 1 cup diced tomatoes
- 3 tablespoons chopped cilantro
- 1/4 cup diced red onion
- 1/4 cup mayonnaise
- 1/2 cup sour cream
- 3 tablespoons chipotle in adobo (sauce only)
- Juice of 1/2 medium lime
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente; drain and rinse with cold water.
