  • 8 oz. pasta (cooked in salted water)
  • 3 tbsp butter (divided)
  • 2 zucchini (diced small)
  • 1/2 tsp salt (plus more to taste)
  • 4 garlic cloves (minced)
  • Juice and zest of 1 lemon
  • 1/2 tsp red pepper flakes
  • Black pepper to taste
  • 1/4 cup parmesan cheese (freshly grated)
  • 1/3 cup pine nuts (optional, toasted)

Instructions

  1. Cook pasta according to package instructions until al dente. If using pine nuts, toast them in a skillet on medium-low heat until golden.
  2. In a large skillet over medium heat, melt 2 tbsp butter, then add diced zucchini and salt. Sauté for 3-4 minutes until tender.
  3. Stir in the remaining butter, minced garlic, lemon juice, zest, red pepper flakes, and black pepper. Cook for another minute.
  4. Add the cooked pasta to the skillet and toss everything together until well combined. Top with parmesan cheese and toasted pine nuts before serving.
