  • 2 large eggs
  • 2 tablespoons canola oil (plus more for frying)
  • 1 cup all-purpose flour
  • A pinch of salt
  • 2 tablespoons sugar
  • 8 oz. ricotta cheese
  • Zest of 1 lemon
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 to 4 tablespoons milk for the filling

Instructions

  1. In a blender, combine cold milk, eggs, canola oil, flour, salt, and sugar. Blend until smooth.
  2. Cover the batter and refrigerate it for 1 to 2 hours.
  3. Heat a non-stick skillet or crepe pan over medium-high heat and add oil.
  4. Pour a small amount of batter into the center of the pan while swirling to spread evenly.
  5. Cook until golden brown spots form (about 20 seconds), then flip and cook for another 15 seconds.
  6. For the filling, blend together ricotta cheese, lemon zest, granulated sugar, vanilla extract, and milk until smooth.
  7. Fill each warm crepe with the ricotta mixture, roll or fold them up, and serve.
