  • 8 oz linguine
  • 2 chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 garlic cloves, minced
  • 6 roma tomatoes, peeled and cut into sixths
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • Fresh basil leaves, chopped
  • Grated Parmigiano cheese

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large sauté pan over medium heat. Sear the chicken until golden brown on both sides; let it rest before slicing.
  3. Cook linguine in boiling salted water according to package directions; reserve ½ cup pasta water before draining.
  4. In the same pan used for the chicken, add olive oil and butter; sauté minced garlic until fragrant. Stir in tomatoes and lemon juice; simmer for 5 minutes.
  5. Add cooked linguine, reserved pasta water, lemon zest, basil, Parmigiano cheese, and sliced chicken to the pan; toss gently to combine.
  6. Serve garnished with more cheese and fresh basil if desired.
