  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tbsp jerk seasoning, store-bought or homemade
  • 1/2 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp cayenne pepper, optional for extra heat
  • Salt and black pepper, to taste
  • 1 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 1 ripe mango, diced
  • 1/2 cup shredded carrots
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup plain Greek yogurt
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro

Instructions

  1. In a medium bowl, combine chicken cubes with olive oil, jerk seasoning, allspice, nutmeg, cayenne pepper (optional), salt, and pepper. Toss well and marinate for at least 30 minutes.
  2. Heat a large skillet or grill pan over medium-high heat. Cook marinated chicken until fully cooked and slightly charred, approximately 6-8 minutes.
  3. In a large bowl, mix red cabbage, green cabbage, mango, shredded carrots, red onion, and cilantro to create the slaw.
  4. In a small bowl, whisk together Greek yogurt, honey, lime juice, and cilantro to make the dressing.
  5. Assemble bowls by dividing the mango slaw among four bowls. Top each with jerk chicken and a dollop of honey lime cream.
