  • 1 lb penne pasta
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 cup grape tomatoes, halved
  • 1 orange bell pepper, sliced
  • 1 crown broccoli, chopped
  • 3 garlic cloves, minced
  • 1/2 red onion, chopped
  • 3 tbsp olive oil
  • 2 tsp Italian seasoning
  • Juice of 1 lemon
  • 6 tbsp salted butter
  • 3/4 cup reserved pasta water
  • 1/2 cup parmesan cheese, shredded

Instructions

  1. Prepare all vegetables by chopping and mincing as needed.
  2. Cook the penne pasta according to package instructions; reserve pasta water before draining.
  3. In a large pan over medium heat, add olive oil, garlic, and onion. Sauté until soft and fragrant.
  4. Add zucchini, yellow squash, broccoli, tomatoes, and bell pepper along with Italian seasoning. Season with salt and pepper; sauté until veggies are tender yet crisp.
  5. Reduce heat to low; combine cooked pasta with vegetables in the pan along with reserved pasta water, butter, lemon juice, and parmesan cheese. Stir well to combine.
  6. Serve warm topped with additional parmesan if desired.
