  • 4 pounds boneless skinless chicken thighs (or breasts)
  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic

Instructions

  1. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic to create the marinade.
  2. Reserve 1 cup of the marinade for basting. Place the remaining marinade and chicken into a ziplock bag. Seal and marinate in the refrigerator for at least 3 hours or overnight for best results.
  3. Preheat your grill to medium heat. Remove chicken from marinade and discard leftover marinade.
  4. Grill chicken for about 6-8 minutes on each side or until fully cooked (internal temperature reaches 165°F). Baste occasionally with reserved marinade during the last 5 minutes.
  5. Garnish with sliced green onions before serving.
