  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 sweet potato, peeled and cubed
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your grill to medium-high heat. Season chicken pieces with garlic powder, onion powder, salt, and black pepper. Grill for 2-3 minutes on each side until cooked through.
  2. Preheat the oven to 400°F (200°C). Toss sweet potato cubes, zucchini slices, and red onion wedges with olive oil, garlic powder, onion powder, salt, and pepper in a large bowl. Spread on a baking sheet and roast for 20-25 minutes until tender-crisp.
  3. In a small bowl, combine Greek yogurt, chopped cilantro, lime juice, minced garlic, salt, and black pepper. Whisk until smooth.
  4. Assemble bowls by dividing roasted vegetables and topping with grilled chicken. Drizzle cilantro lime dressing over each serving.
