- 1 zucchini, sliced

- 1/2 cup plain Greek yogurt
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your grill to medium-high heat. Season chicken pieces with garlic powder, onion powder, salt, and black pepper. Grill for 2-3 minutes on each side until cooked through.
- Preheat the oven to 400°F (200°C). Toss sweet potato cubes, zucchini slices, and red onion wedges with olive oil, garlic powder, onion powder, salt, and pepper in a large bowl. Spread on a baking sheet and roast for 20-25 minutes until tender-crisp.
- In a small bowl, combine Greek yogurt, chopped cilantro, lime juice, minced garlic, salt, and black pepper. Whisk until smooth.
