  • pounds boneless, skinless chicken strips
  • 2 tablespoons olive oil
  • 8 corn tortillas
  • 2 ears sweet corn
  • 1 medium avocado
  • ½ cup salsa
  • ½ cup sour cream
  • 1 medium red bell pepper
  • ½ medium red onion
  • 1 cup grape tomatoes
  • 2 medium jalapenos
  • 1 tablespoon chopped fresh cilantro
  • ½ medium lime (juiced)
  • 1 pinch salt
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano

Instructions

  1. Rinse the rice under cold water until clear. Cook according to package instructions. Fluff with a fork, then mix in lime juice, cilantro, and salt.
  2. In a bowl, combine olive oil, kosher salt, black pepper, chili powder, garlic powder, and oregano. Marinate chicken strips for at least 10 minutes.
  3. Preheat grill to medium-high heat. Grill chicken strips for about 6-8 minutes on each side until cooked through.
  4. Grill sweet corn for 5-7 minutes until charred; dice fresh toppings while chicken cooks.
  5. Assemble bowls with rice base, topped with sliced chicken, grilled corn, and desired toppings.
