  • 1.5 lbs boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cucumber, peeled, seeded, and grated
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large flour tortillas
  • 1 red onion, thinly sliced
  • 1 pint cherry tomatoes, halved

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Add chicken strips and coat well. Cover and refrigerate for at least 30 minutes.
  2. Combine grated cucumber, Greek yogurt, minced garlic, fresh dill, salt, and pepper in another bowl. Mix well and refrigerate.
  3. Heat a skillet over medium-high heat. Remove chicken from marinade and cook until browned and cooked through (6-8 minutes).
  4. Follow package instructions to warm the tortillas.
  5. Spread tzatziki on each tortilla, add chicken and veggies, then fold or wrap as preferred.
