Ingredients
- 1 pound boneless skinless chicken breasts
- 2 tablespoons canola oil
- Zest and juice of 1 large lime
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 clove garlic, chopped
- 1 jalapeño, chopped (seeds removed for less spice)
- 1 large red bell pepper
- 1 large green bell pepper
- 1 large red onion
Instructions
- Cut the chicken into bite-sized pieces and place in a zip-top bag.
- In a bowl, mix canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt. Pour over the chicken in the bag, seal tightly, and marinate for at least 30 minutes (or overnight).
- Preheat your grill to medium-high heat. Soak wooden skewers in water if using.
- Cut bell peppers and onion into chunks. Alternate threading marinated chicken pieces and vegetables onto skewers.
- Lightly oil the grill grates and grill kebabs for about 6 to 8 minutes or until cooked through, turning occasionally.
- Serve warm with fresh cilantro and additional lime juice.
