  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 1 cup cheddar cheese (small diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1/4 teaspoon Sriracha
  • salt (to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill (chopped)

Instructions

  1. Cook the elbow pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a mixing bowl, combine the cooked pasta with 1/2 cup of dill pickle juice and let it sit for 5 minutes before draining again.
  3. In another bowl, mix together mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, black pepper, and fresh dill until smooth.
  4. Add the drained pasta to a serving bowl along with diced cheddar cheese, sliced pickles, chopped dill, and finely chopped onion. Toss everything together with the dressing until evenly coated.
  5. Refrigerate for at least 4–6 hours before serving to enhance flavors.
