  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

  1. Prepare the dressing by mixing mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, garlic, salt, and pepper in a bowl. Chill if desired.
  2. Boil water in a large pot; add shrimp and cook for 2-3 minutes until pink.
  3. Transfer shrimp to an ice water bath using a skimmer for cooling. Drain and chop into bite-sized pieces.
  4. In a mixing bowl, combine chopped shrimp, cucumber, green onions, and the prepared dressing until well coated.
