Ingredients
- 12 ounces dry pasta
- 2 ½ pounds zucchini
- ¾ cup extra virgin olive oil
- 1 cup diced sweet onion (like Vidalia)
- Pinch of red pepper flakes
- 1 ½ tablespoons minced garlic
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 4 tablespoons chopped fresh basil
- 4 tablespoons chopped fresh oregano
- 4 tablespoons chopped fresh mint
- 1 cup heavy cream
- ¾ cup freshly grated Romano cheese
Instructions
- Cook the pasta according to package directions; reserve one cup of pasta water before draining.
- Halve zucchinis lengthwise, remove seeds, and shred using a box grater or food processor.
