  • 1 cup frozen sweet corn (thawed)
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup olive oil
  • 2 tablespoons granulated sugar
  • 1/3 cup white vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt

Instructions

  1. In a large mixing bowl, combine the Roma tomatoes, black-eyed peas, black beans, corn, red onion, green bell pepper, and red bell pepper.
  2. In a separate bowl, whisk together the olive oil, sugar, white vinegar, chili powder, and kosher salt to create the dressing.
