- 12 ounces Rigatoni
- 1 1/2 – 2 cups diced heirloom tomatoes
- 1 cup fresh mozzarella balls
- 1/4 cup chiffonaded basil
- 1/2 cup olive oil
- 1/2 tsp dried parsley
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1 tsp salt
Instructions
- In a small bowl, mix together the olive oil, dried parsley, garlic powder, red pepper flakes, oregano, black pepper, and salt. Set aside to let the flavors meld.
- Boil water in a large pot. Add Rigatoni and cook according to package directions until al dente. Drain using a colander.
- In a mixing bowl, toss the drained pasta with the prepared olive oil mixture. Allow it to cool for about 10 minutes.
- While waiting for the pasta to cool, chop heirloom tomatoes into bite-sized chunks.
- Use a sharp knife on your cutting board to chiffonade fresh basil leaves. Stack them up, roll tightly, and slice thinly.
- Once the pasta has cooled down slightly, add mozzarella balls, chopped heirloom tomatoes, and chiffonaded basil. Stir gently until combined.
- Serve your Caprese Pasta Salad fresh for optimal flavor or chill in the refrigerator before serving if desired. Enjoy!
