- 1 cup buttermilk (room temperature)
- 2 cups blueberries (fresh or frozen)
- 1/2 cup water
- 1/2 cup granulated sugar
- 2 Tbsp lemon juice
- 2 Tbsp cornstarch mixed with 2 Tbsp cold water
- 1 1/2 cups heavy whipping cream (cold)
- 3 Tbsp granulated sugar
- 1 1/2 cups fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking powder, and salt; set aside.
- In another bowl, beat the butter and sugar until creamy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until just combined.
- Divide the batter evenly between two greased 9-inch round baking pans.
- Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes before transferring them to a cooling rack.
- In a medium saucepan, combine blueberries, water, sugar, and lemon juice over medium heat.
- Once boiling, mix in cornstarch slurry and simmer until thickened. Let cool slightly.
- In a chilled bowl, beat heavy whipping cream until soft peaks form.
- Gradually add sugar while continuing to beat until stiff peaks are achieved.
- On your serving plate, place one layer of cake down; spread some blueberry sauce on top followed by whipped cream.
- Add the second layer of cake on top and repeat with blueberry sauce and whipped cream.
