Ingredients
- 12 oz fresh blackberries
- 1 1/2 tablespoon water
- Sugar (to taste)
- 6 oz cream cheese
- 4 tablespoons milk
- 2 tablespoons fresh lime juice
- 1/2 teaspoon lime zest (optional)
- 1 1/2 teaspoon vanilla extract
- 1/2 cup powdered sugar
Instructions
- In a medium saucepan, combine blackberries and water. Cook over medium heat for 10-15 minutes until softened. Add sugar if needed and stir until dissolved.
- Transfer the mixture to a blender and puree until smooth. Refrigerate until cool, about 30 minutes.
- While cooling, beat together cream cheese, milk, lime juice, zest (if using), vanilla, and powdered sugar until smooth. Chill in the refrigerator.
- Layer blackberry puree and cream cheese mixture into popsicle molds. Insert sticks and freeze for at least 4-6 hours or until solid.
- To serve, run hot water over the outside of molds if necessary for easy removal.
